This is an easy coleslaw recipe to whip up the night before or a few hours ahead.  If you want to save even more time, buying the bagged coleslaw mix from the grocery store is a very good idea.  I sometimes make this too close to dinner and don’t allow enough time for it to sit – it’s still yummy, but if you let it sit for a few hours, or overnight, it’s extra delicious.

This will serve about 5-6.

Ingredients:

4 cups finely diced cabbage (about half a head)

1/4 cup shredded carrot (about 1 carrot)

1 tablespoon minced onions

2-1/2 tablespoons sugar

1/2 teaspoon salt

1/8 teaspoon pepper

1/4 cup milk

1/4 cup mayonnaise

2 tablespoon buttermilk

1 tablespoon white vinegar

1-1/2 tablespoons lemon juice (optional)

Combine the diced cabbage, shredded carrot, and minced onions in a large bowl.

Combine the rest of the ingredients in a food processor and blend until smooth.  Pour the mixture over the vegetables, and toss to mix well.

Cover the bowl and refrigerate several hours or overnight before serving.
